Whole or ground? Choose for the way you work.

Do you want visible seeds, a smooth sauce or a finely seasoned dry mix? Whole coriander can provide a different texture from ground coriander. Ground nutmeg can be measured into a mix; whole nutmeg requires a grating or grinding step.

Describe the application when requesting an ingredient. A spice for a visible topping may need a different form from the same spice used in a sauce.

Whole spices suit recipes that deliberately use intact pieces or include a grinding step. Ground spices can simplify preparation when the recipe calls for a powder. Check whether your team has the equipment, time and written method to handle the selected form.

If a recipe calls for an infusion and removal of the spice, include that step in your production method. A whole and a ground ingredient should not be treated as interchangeable without a trial.

Run a small trial before changing an established ingredient. Record the spice form, measured weight, batch size, preparation method and result. Compare the finished food under the conditions in which you normally serve or use it.

Avoid assuming that a spoonful of a whole spice equals a spoonful of its ground form. Use the recipe trial to set the quantity your process needs.

Include the ingredient name and form in your request. Add any grade, particle-size requirement or existing specification that matters to your application. If more than one variant is listed, identify the one you want.

Keep the agreed ingredient description with your purchasing record so repeat requests are clear. Current availability, pack sizes and any requested documentation can be discussed before an order is confirmed.
